Lemon Blueberry Yogurt Popsicles

Summer is quickly approaching and hotter temps (of course) with it! I can’t think of a more perfect summer treat than these Lemon Blueberry Yogurt Popsicles! These sweet treats are secretly healthy at only 80 calories each!!

I have such a big sweet tooth, but I also love to workout and am trying to eat a little healthier too. I came up with these as a little treat for my family and they loved them!! Its got the perfect amount of sweet to it but also cool and refreshing too!

The main reason I chose to use greek yogurt for these Lemon Blueberry Yogurt Popsicles is mainly for the protein in them! I am always looking for ways to add in some protein any way I can to my treats. It’s not a lot, but 5g of protein isn’t too bad at all!! TIPS FOR MAKING THE BEST POPSICLES

  • HERE is the exact popsicle molds that I use, they are super easy to use.  To get them out, you can just press on the bottom and pull on the stick to get them out pretty easy!
  • the swirling part isn’t necessary but, they come out sooo pretty!! lol
  • I recommend at least 8 hours, I checked mine after 6 hours and they were still a little slushy.  After a full 24 hours they were amazing
  • I used plain greek yogurt, but I understand that not everyone loves the flavor of plain greek yogurt, but I’m sure that vanilla or lemon flavor greek yogurt would be amazing as well!! (I’ll be playing with some more flavors soon!)

Lemon Blueberry Yogurt Popsicles

Perfect (healthy), refreshing summer treat!!

Equipment

  • Popsicle Mold
  • digital Food scale (optional)

Ingredients

  • 1 1/2 cup greek yogurt I used plain, but you can use any flavor!
  • 1/2 cup coconut milk
  • 10 g lemon juice (or 1 tbsp) plus the zest from the lemon
  • 20 g truvia or 2 tbsp

Blueberry sauce

  • 1/4 cup maple syrup
  • 200 g blueberries or 1 cup
  • 1 tsp vanilla extract
  • 1/4 cup water

Instructions

  • First start off making the blueberry sauce by adding your blueberries, water, maple syrup and vanilla extract to a sauce pan and bring to a boil, then simmer for 5 minutes
  • remove the sauce from heat and allow to cool completely (you can also pop in the freezer to cool off while making the next part)
  • then add your yogurt, coconut milk, lemon juice, zest and truvia to a bowl together and mixing together with a mixer
  • after the sauce has cooled, add about 1/2 to your yogurt mix and SWIRL with a spatula (this creats a pretty marbled effect to the yogurt mixture)
  • then take your popsicle molds (link in the notes to the molds that I use!) and add about a 1/4 cup of sauce to each mold (my mix made about 7 popsicles) THEN finish filling the mold with the yogurt mixture.
  • add your popsicle sticks and stick in the freezer for at least 8 hours, but preferably 12 hours.
